So recently, I've had a love for omelettes, and started making them for myself.
The flavours are coming out fine, I'm doing okay getting the ingredients to spread evenly etc, but the trouble is, I can never get them to stay whole. Was just wondering if anyone had any suggestions? Maybe I'm using too much/little milk? Cooking at too high/low a temperature?
There's got to be a seasoned (pardon the pun ;D) omelette-maker on the board somewhere!

I don't use any milk in mine Neko. Just lightly beat your eggs to get a bit of air in them, and pour them in the frying pan (low heat). When the eggs start to set at the edges pull them in with a spatula and let the uncooked egg run to the sides of the pan to cook. When it's been cooking for a few minutes, sticj it under the grill for a minute or two just to finish off - makes it nice and light anf fluffy then

make sure you season well - salt and pepper and maybe a few mixed herbs or something as well. I usually soften some white onion in the pan, and maybe a bit of chorizo before adding the eggs - and if you want you can grate some cheese just before you stick it under the grill
