Would they penetrate skin? And wouldn't they get warm and melt when they were being fired?

Nope in precharged airguns the air is stored under pressure in a reservoir at around 3000 psi and released in small ‘squirts’ each time a pellet is fired. During filling the reservoir will warm up but then returns to normal temperature, so any expansion after that will reduce the air temp.
In the ‘spring and piston’ style airguns there is rapid heating at the air is compressed – often igniting any oil that may be in there ,or any model diesel fuel that may have found its way in, but this is a different concept.
