I did indeed promise, however, so here they are - recipes for teriyaki sauce, as given in 'Taste of Japan' by Masaki Ko.
As used for marinade for 'teriyaki trout':
75ml/5tbsp soy sauce 75ml/5tbsp sake or dry white wine 75ml/5tbsp mirin
(In the recipe, these are mixed together and poured over the trout fillets before marinading in the fridge for 5-6hrs)
As used in 'Chicken cakes with teriyaki sauce':
30ml/2tbsp sake or dry white wine 30ml/2tbsp sugar 30ml/2tbsp mirin 30ml/2tbsp soy sauce
(In this recipe, the ingredients are mixed and poured into the pan during cooking - probably good for your stir-fry, since it specifically says to keep moving/shaking the pan to prevent the sauce burning)
I think the 'third one' I mentioned must have been me accidentally counting yakitori sauce, so my apologies there!

I'm not to big of a fan on stir frys but these sauces sound 'Pukka'

my uncle in law says it is a pain but since being diagnosed and now eating all the right foods he feels great. Just takes ages to do the shopping having to read all the labels.
